Yuba is the thin film that forms when soymilk is heated. It's rich in protein and nutrients and is essential in Buddhist cuisine. We visit temple-filled Kyoto, where yuba has long been a prized ingredient used in everything from high-end cuisine to home cooking. We visit a yuba producer founded over 300 years ago to discover how it's made, and enjoy yuba dishes at a world heritage temple and traditional Kyoto restaurants. In Tokyo, we see how yuba can be used in even French cuisine.
